Vegan What I Eat In A Day

So if you didn’t know, and I don’t know how you’ve missed this as it’s been plastered all over my blog for the last month! But I’m doing #Veganaury with the intention of keeping it up.

Over the last month I’ve completely transformed my diet to planet based and I’ve been loving it. I’ve been cooking different meals, replacing meat with lentils and other pulses and just dabbling with different food groups.

I still have a lot of things I’d like to try, like seitan. I’ve heard it’s super easy to make and is a versatile meat sub. You can flavour it to whatever tickles your fancy. Or if you’re feeling lazy (as we all do from time to time!) you can’t buy it in Sainsbury’s.

I thought for today’s post I’d show you what I eat in the day. I’d say I’m a lazy vegan, but there’s nothing wrong with that. I lead a busy life so need food to be quick and easy. I often prep all my food for the week on a Sunday but since I’ve been off work I’ve being cooking as I go!

Breakfast – Blueberry and Chocolate Protein Pancakes –Kcals: 374 Protein: 30.2g

Breakfast is probably my favourite meal of the day, I look forward to my big bowl of oats every morning! Today I was feeling adventurous and fancied doing something different with my oats. So I blitzed them up and make myself some chocolate protein pancakes using the vegan Scitec powder in chocolate praline. The outcome was unreal, literal food porn if I do say so myself.

Lunch – Sweet Potato Soup and Cheesy Marmite Crumpets – Kcals: 453 Protein: 15.1g 

I’ve had this soup in my fridge for blinking ages and it’s been worrying me that it’s gone past it’s best, decided that today was the day to crack it open. Oh my it’s delicious. It’s got a kick to it, which I wasn’t expecting. Pairing it with cheesy marmite crumpets (literally obsessed at the moment) was pure genius!

Dinner – Shepherds Pie – Kcals: 456 Protein: 31.4g 

The cravings for a big hearty meal have been unreal recently, it was either shepherds pies or toad in the hole. Once I had consulted my cupboards and found I had all the ingredients for shepherds pie my decision was made. This definitely hit the spot, haven’t had anything like this since being vegan. Plus it’s so easy to make

Pudding – Belgian Bun – Kcals: 420 Protein: 6.5g

buns and blogging, what a way to end a Saturday!

Popped to Greggs the other day to hunt the new vegan sausage roll. Finally got my hands on one, and also picked up a Belgian Bun. This isn’t my normal sweet treat but damn was it nice to try something different. I will definitely be buying these again. Best bit is that they came in a two pack and I’ve got one left for tomorrow. I had planned on giving to my Dad, but sorry they’re too good!

Today was such a yummy food day, bet you wouldn’t know all this food was vegan unless I hadn’t told you!

  1. Well done! I admire you because as much as I love fruit and veg and I’m the type of person to eat that over sweets and crisps, I just couldn’t give up meat. Anna xx

    1. I love me some pick n mix and obviously that isn’t vegan (gelatine, yuck) but since going vegan I haven’t craved it. Definitely still have my sweet tooth but there so many accidentally vegan products out there! xx

  2. Everything looks so delicious, especially your breakfast! If I had breakfast like that it would be my favourite meal of the day too! Also I wanna try the vegan sausage rolls at greggs, might get one this week to see how it is! I’m fully vegetarian now, and honestly I don’t miss meat at all.
