The BEST Fluffy Vegan Pancakes

Happy Tuesday everyone! Oh what a good one it will be too, coz it’s PANCAKE DAY. 

I’m writing this post because something crazy happened yesterday…. I made pancakes! That may not seem amazing to you but honestly, I am the worlds worse pancake maker. I never get the consistency right, they burn or fall apart. Disaster after disaster.

Despite many previous failed attempts, I didn’t give up and thank the Lord I didn’t because I managed to whip together these little fluffy golden pancakes-did I mention they’re totally vegan! 

Since this is such a huge success for me, I just had to share the recipe….

You will need:

125g plain flour

240 ml plant milk, I used oat

2 tbsp sugar

1 tbsp baking powder

1 tbsp Apple cider vinegar 

A sprinkling of salt

Pop all the ingredients in a bowl and mix until no flour or sugar lumps. You’ll notice the Apple cider vinegar and baking powder react together and start to fix, this is crucial because it’s what makes these pancakes nice and fluffy!

Once your mixture is ready, grab a frying pan, place over a low heat and spray with an oil of your choice. Allow the pan to heat for a few minutes before adding your mixture in.

Place your first blob in, this can be however big you want. I like to make medium ones so I get more! 

Allow to rest on the heated pan for a few minutes, you’ll notice more bubbles appearing and some popping. Once the edges look slightly brown go around the pancake with a spatular and loosen the whole pancake.

Scoop up your pancake and flip. If you’re feeling adventurous you could even use the pan to flip, I definitely am not skilled enough for this and didn’t want to risk loosing a valuable pancake 🙂 

Make as many pancakes as you desire, you’ll get a fair few from this mixture!

Serve with whatever tickles your fancy, I topped mine with soyummy blueberry yoghurt from Aldi, choc shot, free from choc drops, a little syrup and some oats and raisins. Yum yum.

I’m already dreaming of my next batch, think I might stick to the classic lemon and sugar. Oh but of course the holy grail biscoff spread will have to come out to play!
